Selected fresh Valpolicella DOC wine goes through a secondary fermentation process on top of Amarone pomace, which are still full of life. Hence we obtain a full-bodied, stuctured wine with a spiced, occasionally balsamic, aftertaste. Once the primary fermentation has been reached, it rests in the secondary barrels. The final seasoning in its bottle turns it into an elegant yet mellow wine, with a long persistence on the palate.
